While Cassoulet is best known as a French dish, it’s really just part of a family of bean and cured meat casseroles eaten on cold winter nights across all of southern France and Spain.  For our second take on Cassoulet, Chef Jacques will feature a Basque take on Cassoulet (think Chorizo vs. Toulouse sausage) as importer Jonas Gustafsson presents hearty Spanish and Portugues wines along side.  Here’s the menu:

Grilled marinated sea scallop in orange over fennel confit
Brunoise of Provençale vegetable in a saffron tomato dill sauce
