For me, this is the essence of Chablis. Loads of seashell, flint, and saline apple flavors in a perfectly balanced, very long, wine. Classy and with huge potential in cellar, but approachable now with a little air and a not-too-cool serving temperature. A wine to pay attention to.
"The 2010 Chablis Forets opens with suggestions of smoke, crushed rocks and minerals of all sorts, hinting at what is to follow. The Forets shows off layers of mineral-infused white stone fruit in an energetic, vibrant style. The finish is long, clean and beautifully focused. I especially like the way the fruit lingers on the aftertaste. This is a gorgeous wine endowed with fabulous balance and precision. Anticipated maturity: 2013-2020."Wine Advocate 92 points
"A wonderfully complex and well-layered nose of green fruit, lemon zest, sea breeze and iodine is followed by a beautifully well-delineated and mineral-driven medium-bodied flavors that culminate in an equally complex, balanced and highly persistent finish. This very fine effort is an exercise in harmony and punch."Allen Meadows 91-93 points
- Dom Louis Michel Chablis 1er Cru Vaillons 2010 Product #25561 (In Stock)

This is what I imagine a terrific 1er Cru Meursault would taste like if it were made in all stainless steel. There's a captivating note of grilled nuts and fresh butter here and a rich texture but still lots of lime skin, sea shell, and mineral/acid cut. Distinctive and delicious. I’d decant this for 30 minutes now and serve a tad warm.
"The estate's 2010 Chablis Vaillons is a striking wine graced with exquisite perfume and layers of fruit, all supported by a persistent vein of chalkiness. This is one of the more nervous, wiry wines of the lineup, but its class and pedigree are impossible to miss, even at this early stage. Hints of grapefruit and lime linger on the bright, articulate finish. In 2010, the Vaillons is made from parcels in Roncieres, Chatains and Melinots. Anticipated maturity: 2015-2025."Wine Advocate 92 points
"A very fresh and expressive nose of algae, citrus and lightly spiced floral notes merges into racy, intense and highly energetic middle weight flavors that possess an attractive sense of underlying tension on the notably dry, balanced and lingering finish. Lovely juice."Allen Meadows 89-92 points
- Dom Louis Michel Chablis 1er Cru Montee Tonnerre 2010 Product #25603 (In Stock)

From nearly 40 year old vines in what most consider to be Chablis’s best 1er Cru vineyard, this is the most cellar-worthy of these wines but also the most compacted and closed today. The aromas are almost floral now and there’s fantastic concentration and depth here. Masterful.
"The 2010 Chablis Montee de Tonnerre is exquisite. Weightless and impeccable, the Montee de Tonnerre impresses for its crystalline purity, nuance and depth. Nothing in particular stands out, just the wine’s superb pedigree and harmony. This is another hugely promising wine from Louis Michel. Anticipated maturity: 2014-2022."Wine Advocate 91-93 points
"Here the components of the nose are similar to those of the Fourchaume yet here it is notably more complex and integrated. The superior depth continues onto the dense, rich and more obviously concentrated flavors that offer plenty of oyster shell and iodine hints on the balanced and impressively persistent finish. This is lovely stuff. Sweet Spot Outstanding."Allen Meadows 91-93 points
