"Occultum Lapidem" means "hidden stone" in Latin and reflects Michel Chapoutier's goal with this Syrah-heavy blend from older vines around the Roussillon village of Latour de France. The stony soils here push Syrah, Grenache, and Carignan to work hard and deliver plenty of ripeness with a definite mineral, slate-like note. A long fermentation (4 weeks) and aging half in cement and half in large cask ensures plenty of power and structure come along with the rich fruit. Drink it near-term with garlicky lamb or olive-laced stews or let it unwind in cellar for years.
