Coming from a very storied tradition of Bouzy Champagne producers, the Pierre Paillard Brut is one of the softest, prettiest Champagnes we've found in a long time. A blend of '06/'07 vintage Grand Cru Pinot Noir and Chard fruit, Brut is has amazing aromas of fresh yellow pear and chalky mineral. The palate will blow you away with green apple and one of the softest textures you ever tasted. The wine finishes with flavors of soft cashews and genty caramalized pears.
"(60% pinot noir and 40% chardonnay, from Bouzy; based on 2007, with 20% reserve wine from 2006) Light, bright yellow. Ripe pear and redcurrant aromas are complicated by rose oil, anise and toasty lees. A hefty, palate-coating Champagne that offers pliant orchard fruit flavors and a touch of orange marmalade. Finishes smooth and broad, with very good sappy persistence. I'd serve this broad-shouldered Champagne with a richly sauced poultry dish or strong cheeses."International Wine Cellar 90 points
