From this biodynamic estate in the Jura comes this singular Chardonnay. While not a vin jaune, the oxidized, Sherry-like white from this region, there is a bit of that character here. With its racy acidity and faint hint of nuttiness, this would be perfect with a cheese-centric dish like homemade macaroni and cheese or potato gratin.

Anyone who loves Fino Sherry owes it to themselves to sample this handmade, very traditional, utterly unique, wine from the l'Etoile AOC in Jura. A blend of mostly Chardonnay with some Savignin blended in, this dry white displays the trademark oxidative, nutty character of wines from this region.
The result is something like Fino Sherry, but with even more complexity and zest and a touch more weight. You really have to try this to grasp the complex interplay of grilled nuts, citrus, and the beguiling notes of oxidization. Irresistible with nuts, sausage, and cheese.
