For perfect balance, Philippe Danel picks one third of his Viognier about two weeks early, one-third when it looks just ripe, and the rest about two weeks. Each lot is fermented and aged separately and then Philippe blends the three to make a perfectly balanced cuvee.
What a delight this lively, fresh, and wonderfully precise Viognier is! The aromas are generous and fresh, with scents of crisp peach, tropical flowers, creamy vanilla and wet stones bursting from the glass. It's rich and creamy on the palate with layers of peach, apricot, sweet key lime, and exotic floral flavors coating your mouth before a burst of tangy peach, lemon/lime juice, and light minerality clean up on the finish. Perfectly ripe at 13.5% abv, generous without heaviness, and full of fruit - but much more than just fruity! - this is a lovely cocktail sipper and will be even better with poached chicken in cream or goat cheese and citrus salad. Seriously fun stuff.

The fruit is flavorful on the finish and there is a hint of lemon around the edges. It seems rather lively in its youth. Don't hesitate to dive in–but it will drink great for several years, too."
