This may be the very best value in  Pascal’s cellar in 2009, and I certainly fell in love with it during last January's visit to Chez Maillard.  Once again, the plush, velvety, texture with terrific ripeness you expect from a top 2009 red Burgundy.  The fruit is perfectly balanced by fine-grained tannin and bright acids and the raspberry, cherry, and plum flavors gain depth from notes of earth, mushroom and spice.  A mineral element starts in the middle and powers on through the long, complex, finish.  This is drinking well now and will be going strong in 10 years.

Always one of my favorite wines from this address, the 2009 Lollieres is one of the best ever from Pascal. This wine is always concentrated, powerful, and trends towards black fruit with notes of coffee grounds, sweet spice, smoke, and roasted meat.  In the terrific 2009 vintage, it's even more glorious than usual with an extra depth to the black raspberry and Bing cherry fruit and a rich, velvety, texture.  Even with all the ripeness, the bright acidity and fine minerality show through nicely on the long, ripe, finish.  Very fine stuff.

You've heard about 2009's ripeness, but great winemakers (like Pascal Maillard) retained plenty of acidity and mineral notes to create truly exciting white Burgundy.  Most of the famous hill of Corton is planted to Pinot Noir, but Pascal grows Chardonnay in a small vineyard he grafted over from Pinot Noir after noticing how chalky and full of limestone the soil was. You'll find plenty of 2009's famous ripeness here - rich fruit flavors of golden apple, pineapple, and a touch of pineapple - but also zesty citrus acidity, chalky mineral, and a dash of fresh chervil and mint. Long in the mouth and on the finish and almost impossible to resist now, even if it will be better in 10 years.

A top-notch, Grand Cru white Burgundy here from first sniff to last sip.  There's a touch of reduction on the nose - as there should be in a wine built to age - but also oodles of salty caramel, grilled pear, roasted hazelnut, tangy butter and crisp apple scents.  True Grand Cru size and texture here, as the wine fills your mouth and coats your palate with a lush, almost oily, texture.  On opening, the flavors are still fairly compact in this young, young, beauty but intense ripe peach and apple fruit, butter, and warm nut elements show immediately over layers of chalky mineral and fresh mint.  Give it some air, the the palate explodes with notes of nectarine, grilled pineapple, lemon curd, and even more mint joining the show.

The big, rich, texture, is perfectly balanced by bracing acidity and loads of chalky mineral on the firm, fresh, finish where a note of tangy peach and more hazelnut goes on and on.  It's amazing for a wine of this ripeness, power, and size to have so much saline, mineral, freshness - but, then, that's why it's a Grand Cru!  Let it sit for 3-4 years and enjoy for 20.

With all the fuss over the super-ripe 2009s, it's easy to miss out on the classic structure, balance, and charm of bottles like this fine Grand Cru 2008.  This year's model shows off plenty of the animal, earthy, aspect of Corton Renardes but still has a nice core of pretty Pinot fruit.  It's unusually elegant for Corton Renardes, but still packs a punch of powerful flavors and has the perfect balance of fruit, tannin and acid to develop well in cellar for a decade or more.  Or, drink it now with earthy foods and mushrooms!
