Half Bottle. Guillaume Michel crafts his “village” level Chablis from seven different Chablis vineyards located on both sides of the river. The organically farmed vines are up to 50 years of age and produce clean, ripe, succulent fruit – even in difficult vintages like 2013. From the classic green-tinged color and modest 12.5% alcohol, you might expect this to be sharp or green tasting, but even with no oak to hide any flaws, it’s a lovely marriage of generous, ripe green and yellow apple, tangerine, and lemon/lime fruit and Chablis classic cut and salty stone minerality. An easy wine to enjoy all by itself or with a wide range of foods, but you certainly will love it with traditional Chablis matches like oysters and clams!

Fresh Chardonnay crushed and fermented in steel with 6 months on the lees for salinity and breadth. Pretty aromas of white fruit, white flowers and sea shells. Crystal clear palate of crisp apple and stone fruit with citrusy undertones. Fresh and saline through the long, clear, salty finish. Day 2 - Sea shell and iodine on the nose then very pure and salty on the palate with green melon and citrus and apple underneath. Very long finish of juicy fruit and wet stones.

"The 2014 Chablis Villages, which is aged in stainless steel over six months, has a slightly earthy, almost mulch-like bouquet that feels awkward at the moment. The palate is fresh and citrus-driven on the entry with moderate weight of fruit and then segues into a tightly-wound finish that feels there is plenty of energy coiled up. We love the marriage of ripe, wide-open, Chardonnay fruit with Chablis’ crisp acidity and lingering, refreshing, wet-stone minerality. The rich texture makes this delicious to sip all on its own, but it will sing with shellfish, halibut, and creamy mushroom and chicken dishes, too. Bravo!

Delivers more sweetness and stuffing, with fruit-driven flavors of lemon and orange carrying nicely on the aftertaste. Vaillons is always vivid, focused, and very mineral-driven, and the 2014 edition shines in that vein. Over the past few vintages, Dauvissat’s Vaillons has shown a bit more flesh on the mid-palate, making it a fine choice to enjoy young and with age.

Cooler soils than Vaillon and Sechet means Forest (or Forets – you’ll see it both ways) ripens a bit more slowly, but these 40 year-old vines (average age) deliver concentration and honeyed richness that’s uncommon at the 1er Cru level. Always a personal favorite and at its best about 4-5 years from the vintage.
“Pale, bright yellow. Underripe pineapple, white grapefruit, mint and crushed stone on the nose. Offers a compelling combination of texture and energy on the palate, showing incisive grapefruit and crushed rock flavors and finishing with near-grand cru depth and persistence. “This is more restrained still, indeed so much so that the nose only reluctantly reveals its notes of classic Chablis aromas that include green fruit, iodine, tidal pool and oyster shell. There is outstanding volume and almost painful intensity to the medium-bodied flavors that brim with a fine minerality before concluding in a stony, long and impeccably well-balanced finale where once again a hint of bitter lemon appears.
