Ghislaine and Jean-Hugues Goisot's estate is really part of Chablis, but rules relaxed after brutal frosts in 1954 allowed other grapes here as well.  This is 100% Sauvignon Blanc farmed biodynamically on Chablis soils of chalk and Kimmeridgien clay and then hand-harvested and fermented with native yeasts.  The texture is very Chablis like - mineral, pure, chalky - but the citrus, pineapple, green apple, and light jalapeno herbal flavors are very Sauvignon. Then, a marriage of Chablis and Sauvignon on the long finish of chalk, green apple, and crushed green herb.  Delicious and captivating.

From a family-owned estate based in Vosne Romanee comes this very serious Bourgogne Rouge.  Unlike  many estates who style their basic Pinot Noirs to be as friendly and approachable young as possible, this has a bit more structure and aging potential than its humble appellation would lead you to think. 

Aromas of dark, ripe cherries, mushrooms, and a bit of baking spice lead to classic flavors of savory red fruits.  No overt oak, but the fruit and acidity is nicely supported.  What's really impressive here are the tannins - a little grippy now, but ripe and mouthwatering.  This will benefit from a little more time in bottle, but can be enjoyed now with a little bit of air.  It's the kind of wine that makes you want old-school French bistro food that is decidedly not diet-friendly - a little chicken liver mousse and a crusty baguette, and you wouldn't even need a main course.

Wild blackberries harvested from around the city of Nevers in Burgundy make this unctuous liqueur, traditionally drunk with Bourgogne Rouge for a sort of brunette sister to the Kir called a Berrichon.  After the berries are harvested, they are frozen to break down their cell walls, making for more concentrated flavors.  Combining the sweetness of ripe fruit with more earthy, musky aromas than the more common creme de cassis from the same region, this is unusual and delicious.
