This is utterly captivating Champagne, based on Pinot Meunier (45%), about 25% each of Chardonnay and Pinot Noir, and the rest Arbanne, Petit Meslier and Fromenteau.  About half is from 2012 and the rest from a solera going back to 1998.  As Wine Advocate said last year, "If that sounds like a recipe for delivering complexity, you’re right!"

"The NV Brut is pretty, delicate and understated, with hints of dried pear, flower and mint that are laced throughout. Soft and inviting throughout, the Brut is a great introduction to the Aubry Champagnes. The feminine, gracious finish only adds to the wine's considerable appeal. The current release is 50% 2012 and 50% a perpetual reserve that goes back to 1998. Dosage is 5.5 grams/liter."  Vinous (Galloni) 90 points

Dom Perignon - yes, he was a real winemaking monk! - pioneered the making of "white" Champagne from "black" Pinot Noir grapes in the 1600s.  The techniques were refined by the large houses in Champagne's northern regions, but somehow never reached the little town of Bouzy in the south.  When Fulgence Vesselle and his neighbors started making their own Champagne around 1900 (having sold their grapes before), they slightly over-pressed and ended up with a wine that was neither all white or full pink - in fact, the pale orange pink of a partridge’s eye or Oeil de Perdix.

The style faded from view around mid-century, but in 1972 Fulgence's grandson, Jean Vesselle, discovered a few bottles of the old wine hidden in a wall.  He was astounded by the color, freshness, and lovely aromas of this old-style wine and, beginning a few years later, launched his own interpretation of Oeil de Perdix.  It's 100% Pinot Noir pressed lightly pink and aged 3 years in bottle before release. History never tasted so good!

"The salmon-colored NV Brut Oeil de Perdrix is another utterly delicious Champagne from Vesselle. Dried rose petals, orange zest, white pepper and mint give much of its high-toned aromatics, but there is plenty of depth to the fruit as well. Deceptively medium in body, the Oeil de Perdrix possesses striking finesse and exceptional overall balance. Oeil de Perdrix is an old-fashioned style of Blanc de Noirs with just a touch of color from a very short period of skin contact at pressing. "  Vinous (Galloni) 93 points

Over the past few years, Cuvee Crayeres has graduated from a delicious introduction to Eric's wines to a complex, distinctive, very grand wine of it's own. It's still a 60/40 blend of Grand Cru Pinot Noir and Chardonnay, with about 40% aged in barrel and 60% allowed to go through malolactic fermentation.  But now it showcases the full range of Eric's blending talents, with just 38% of the wine coming from the 2010 harvest and the rest chosen from various lots of 2009, 2008, 2007, 2006 and 2005 wines.

More than one taster has compared Crayeres to Bollinger over the years, and while the similarity is there, Crayeres is always a bit more fresh and vigorous. Golden fruit, toast, minerality, and exotic citrus aromas and flavors keep pulling you back for another sniff and sip.  Jancis Robinson's comment from the 2013 release still holds here.  "Serious champagne. Rather Bollinger style. Long - almost smokes a cigar, this champagne!"

Here's a stunning wine from a tiny estate (just 12 hectares of vineyard) you've probably never heard of - but one that's gaining plenty of attention in Europe for this luxurious oak-aged Champagne.  Oak and Champagne are not always the best of friends, as the impact of wood (especially new wood) can easily overwhelm Champagne's subtle nuance and grace.  Here, though, winemaker Patrick Voirin uses very old Burgundy barrels (15-20 years-old) for just 4-6 months aging.  Combined with 6-7 years aging in bottle on the lees, this results in a fanstaically rich and complex Champagne very much in the style of Bollinger or Krug.

Cuvee 555 – named for the estate’s home address at 555 Rue de la Liberation in the village of Cramant.  It’s 100% Chardonnay from the Cramant Grand Cru vineyard called Clos du Mardu. We think it’s a blend of 2007 and 2006 vintage wines, but the information is sketchy!  Nothing sketchy about the wine though. You'll find rich, powerful, aromas and flavors of fresh baked bread, spices, lemon peel, toasted nuts and salty caramel here with tiny bubbles and bright acids providing lift and mouthwatering refreshment.

Eric Rodez's rose Champagne always marries the fun, festive, nature of pink fizz to some serious winegrowing and Champagne blending skill - giving a seriously fun wine!  About 45% of the wine is Pinot Noir allowed to rest on its skins at crushing to extract color and then blended with white wine made from roughly equal parts Chardonnay and Pinot Noir.  This year's release is based on vintage 2010 (about half) with reserve wines from 2009, 2008, 2006, and 2005 with 80% of the cuvee aged in barrel aged 4 years on the lees and given Just 4g/l dossage.

It's a bright salmon pink color and with tiny bubbles.  Aromas of wild strawberries and toast aromas and mouth filling flavors of ripe strawberry and tangy cherry fruit surrounded by juicy acids and a touch of biscuit. The creamy texture and round mouthfeel make this all too easy to gulp – but slow down and enjoy the ride.

We're self-admitted freaks for bubbles around here, but when it comes to true Champagne, we're a little picky.  It's not cheap, and we won't bring something new in unless it really wows us.  This wowed us.
Guy Larmandier is a family-owned domaine, with vineyards in the Cote des Blancs, one of the most prestigious regions of Champagne.  This Grand Cru bottling is made from 100% Chardonnay from the Grand Cru village of Cramant. It's the kind of handmade grower Champagne we are thrilled to be able to sell - and drink!

At first sniff, this smells like the skin of a really good, juicy pear.  As the bubbles dissipate a bit, aromas of white flowers and brioche emerge. There's a hint of roasted hazelnuts as well. Despite its minimum 36 months of aging, it's crisp and refreshing on the palate, with flavors of pear, a touch of lemon curd, and a beautiful chalky minerality. The flavors are sophisticated, but never austere. This would, of course, be a no-brainer for anniversaries and New Years' Eve, but sometimes a top-quality Champagne's sparkle and delicate layers are best appreciated on a humdrum Tuesday with no distractions.  Pop this open on movie night with a much smaller guest list and feel like you just spent a million bucks.

100% Pinot Noir from 35 year-old vines and older growing on the most clay-heavy sites within Coessens’s Largillier vineyard.  After gentle pressing, the base wine ferments, goes through malolactic fermentation, and gets months of lees contact all in stainless steel tanks.  Before disgorgement, Jerome conducts extensive bench trials to select the perfect dosage for each release.

It’s a beautiful wine in the glass, pale gold in color with a gentle stream of tiny bubbles at first racing then drifting to the surface.  The aromas are pure and fresh, with complex scents of strawberry, straw, white chocolate, cherry blossom and chalk.  Take a sip and you’ll find the pinpoint fizz delivers amazing precision and delineation to the red berry, goldent apple, licorice, toast, ginger, limestone and citrus flavors.  Tangy red fruit, lemon, ginger, and salty mineral flavors linger on and on and on.  Try this a bit warmer than you expect – 50 degrees seems about right – and in a white wine glass instead of a flute for maximum impact.  Delicious all by itself, but try it with halibut, salmon, or event duck for a breathtaking pairing.

Just a lovely wine from what is shaping up to be an excellent 2007 vintage, Eric Rodez's Millesime 2007 is 58% Pinot Noir and 42% Chardonnay, with all but 10% fermented and aged in barrel. After 7 years on the lees, it's a shimmery gold color with tiny, precise, bubbles.  Big aromas of orchard and stone fruit with accents of fresh cut hay, brioche, and toasted  nut lead to a precise, crisp, palate of pear, citrus, nuts, toast, and more.  Rich, but not heavy, and very long, this delicious dry Champagne is lovely now and will continue to improve for years.
