Olvier tells me that Didier wasn’t crazy about his 2002 Les Combes at first, fearing that he’d harvested too late and lost some freshness. But a decade+ in cellar has done this nothing but good, delivering a rich, savory, white that seems more like 1er Cru Chassagne than Saint Aubin. Aromas of toasted nut, mint, verbena, caramel and consumme show at first, but turn to more fresh cut apple and tangy pineapple with air. The texture is very rich and creamy, but the fruit flavors remain nicely fresh over the mature notes of grilled nut, caramel, and beef stock. Dried caramel and chervil flavors play nicely on the long finish where just the right touch of acidity keeps things pure and clean.
