A small but sensational estate, Clos du Caillou came to my attention when the property was acquired in the mid-1990s by Jean-Denis Vacheron and his wife Sylvie. After a succession of brilliant wines, Jean-Denis was tragically killed in an automotive accident in 2002. It has taken a few years to get the estate back to the level that existed there between 1998 and 2001, but that has certainly been accomplished over recent vintages.

The 2007 Chateauneuf du Pape Les Safres is dominated by 95% Grenache and the rest Syrah, Mourvedre, and Cinsault, all from vines over 50 years old. This wine exhibits tremendous spice box, sweet black cherries, a resiny pine forest note, and abundant pepper. In the mouth it is undeniably seductive, with full-bodied lushness, beautifully pure fruit, a textured mouthfeel, and a terrific finish. This wine can be drunk now or cellared for 10-12 years.Wine Advocate 90 points
