For nearly 10 years now, the Maillard Chorey-les-Beaune Blanc has been one of Cecile’s best selling Chardonnays, please both Burgundy fans and lovers of California Chardonnay alike. The 2007 version retains the best of Pascal’s typical style with this wine - fresh green fruits and a touch of soft vanilla accented by a little bit of creamy butter. But, the cooler 2007 growing season bumps up the minerality and bright, citrusy, acidity a bit. A supple wine loaded with green apple, green pear, white pepper, nutmeg, and fresh butter. Pair it with citrus glazed pork or chicken dish, roasted or grilled shrimp, or most anything featuring roasted shallots.
