Pretty much the essence of Chablis here - steely, lightly lemon/green peach fruited, salty limestone minerality, and a powerful, mouthwatering, finish.  Although 2015's warmth creates a sensation of roundness on the palate, no one is ever going to call this soft or easygoing.  It's a wine built to sip while slurping oysters, chewing on clams, or even gnawing on the leg of lemony roast chicken.  With a little air, though, the wine opens up and the considerable concentration buffers the acids, making this surprisingly tasty to simply drink before or after dinner, too.  We love it.  You will to.

"The 2015 Chablis Cuvee Emeraude comes from three hectares of 45-year-old vines and spent 15 months in stainless steel. It has a vibrant, mineral-driven, marine-influenced bouquet that, frankly, puts many of its peers to shame. The palate is well balanced with a fresh opening, quite saline in the mouth with a harmonious and quite mineral-driven finish that lingers. Very fine. This comes highly recommended. Year-in, year-out, this is one of the most satisfying “village” level Chablis we carry.  The estate lost about half its fruit to frost, hail, mildew and sunburn in 2016, but the grapes that made it to the winery were first rate in deed.  Key lime, apple and more waft from the glass.  As mouthfilling and powerful as the 2015 but with a nice dose of 2014’s acidity and freshness providing extra complexity and zest. This will make a fantastic “house white” this Spring – Fall and delight on its own, with shellfish, or even with savory grilled chicken.

The slightly tighter and more energetic middle weight flavors deliver fine length on the precise, dry and balanced finale where a hint of minerality surfaces. Perhaps THE most stellar value of the offering for drinking now and over the next 10 years.  Fourchaume sits on the same slope and to the north of the Grand Crus and often gives glimpses of Grand Cru richness and power. Wonderful Chablis intensity and salty vibrancy here but also a very generous dose of rich, ripe, buttered pear.  Turns stony and showing a touch of wood-induced salty caramel (20% ages in 1-5 year-old barrel) on the long, pure, finish.  Extraordinary value here in a wine that’s almost too delicious today to justify waiting.

While Fourchaume is more rich and immediately delicious, this could be the better value if you’d like to cellar your Chablis for 3-10 years.  One of the warmer sites in Chablis and, like the Grand Crus, with prime southern exposure, Mont de Milieu gives wines of more body and richness and most other 1er sites.  The richer fruit benefits from a bit more wood (50% of 1-5 years age) to tame the fruit and allow true Chablis minerality and vivacity emerge.  Delicious now for the fruit and spice but at its best from 2020.

From 50+ year-old vines in Chablis's greatest Grand Cru, this is simply stunning.  Fermented and aged all in French oak (1-5 years old), this wants 3-4 years for the vanilla to fade - then watch out.  A truly amazing price for very "grand" Grand Cru white Burgundy.

Here’s a wine that shows the challenge of tasting very young white Burgundy.  Because the wine certainly is reduced and showing it's sulfur when you first open it (although Ed Addiss, Gautheron's importer, says it's already much less than six months ago).  Be patient.  If you want to drink this now, decant it for an hour. Better, open it, pour off a half glass, and then put it in the fridge for 24 hours (which I did).  Or best, stash some away and let a few years of cellar time work its magic.

As the sulfur blows off/integrates, you’ll discover a gem of a wine from a half-acre plot of 55 year-old vines growing in the outstanding Grand Cru of Valmur, right next to Les Clos in site and quality.  The captivating aromas include white and yellow fruits, crushed limestone, and hints of nutmeg and a bit of toasted nut.  On the palate there is good richness to balance the intense, vigorous, structure of bracing acidity and salty crushed rock.  A core of lemon pulp, crisp green apple, and walnut flavors slowly emerge along with a bare hint of fresh chervil.  The finish is long, pure, stony, salty and supremely mouthwatering.  This will really sing from 2020 and will still be going strong in 2035 – all at a price lower than you’d pay for most average village-level Puligny-Montrachet.

Very limited; very lovely!

"Reticent aromas of menthol, oatmeal and white truffle, with stone and citrus fruit notes in the deep background. Silky on entry, then quite firm in the middle, conveying an impression of strong soil character--and sound acidity--to its flavors of citrus fruits, minerals and oatmeal. This rather powerful wine finishes very long and youthful, a tad aggressive but not dry."  Vinous (Tanzer) 91+ points

"The 2015 Chablis 1Er Cru Vaillons was more closed than the Séchets at this point in time, gradually revealing scents of white citrus fruit, nectarine, beeswax and flint, those aromas drawing you in with each swirl of the glass. The palate is very harmonious with a honeyed opening, very concentrated with dried honey, quince and a ravishing ginger and lemongrass-tinged finish that lingers long in the mouth. As usual, this is a flattering Vaillons but that would be to overlook the complexity and precision within."Wine Advocate 92 points
