A luxury Champagne on every dimension other than price.  The 59 wine growers who make up this Aube-based co-op select their best Chardonnay (70%) and Pinot Noir for this high-end bottling.  This year’s release is based on vintage 2008, with 40% of the blend taken from older “reserve” wines, all fermented and aged in tank (no oak).  It was blended and bottled in 2009 and then rested on the fine lees of secondary fermentation for six years before disgorgement and a light dosage.

Aube Champagnes excel in their richness, breadth and depth, and all of that is on display here.  The aromas and flavors are complex, with layers of toast, yellow stone fruit, ripe apple, and yeasty mineral forming the core and subtle accents of red berry, lemon rind, and toasted hazelnut adding complexity.  It’s beautiful in the glass, with the fine bubbles only extended aging can provide, and envelops your  palate with zesty richness before finishing fine, dry and long.  A joy to drink by itself and wildly versatile at table with everything from subtle seafood to grilled steak.  Absurdly high quality for the price.

Dom Perignon - yes, he was a real winemaking monk! - pioneered the making of "white" Champagne from "black" Pinot Noir grapes in the 1600s.  The techniques were refined by the large houses in Champagne's northern regions, but somehow never reached the little town of Bouzy in the south.  When Fulgence Vesselle and his neighbors started making their own Champagne around 1900 (having sold their grapes before), they slightly over-pressed and ended up with a wine that was neither all white or full pink - in fact, the pale orange pink of a partridge’s eye or Oeil de Perdix.

The style faded from view around mid-century, but in 1972 Fulgence's grandson, Jean Vesselle, discovered a few bottles of the old wine hidden in a wall.  He was astounded by the color, freshness, and lovely aromas of this old-style wine and, beginning a few years later, launched his own interpretation of Oeil de Perdix.  It's 100% Pinot Noir pressed lightly pink and aged 3 years in bottle before release. History never tasted so good!

"The salmon-colored NV Brut Oeil de Perdrix is another utterly delicious Champagne from Vesselle. Dried rose petals, orange zest, white pepper and mint give much of its high-toned aromatics, but there is plenty of depth to the fruit as well. Deceptively medium in body, the Oeil de Perdrix possesses striking finesse and exceptional overall balance. Oeil de Perdrix is an old-fashioned style of Blanc de Noirs with just a touch of color from a very short period of skin contact at pressing. "  Vinous (Galloni) 93 points

Last year's release is singing with a year in bottle! It's a 60/40 blend of Grand Cru Pinot Noir and Chardonnay, with about 40% aged in barrel and 60% allowed to go through malolactic fermentation.  About 50% of the blend is from reserve wines going back to the mid-2000s.  With 5+ years on the lees and dosage in the 3-4 g/l range, it’s a classy, elegant, and very pure bottle of bubbly.

This year’s release beautiful to look at with a bright brass color, great transparency and shine, and very, very, tiny and persistent buttles.  The aromas are ultra-pure, featuring fresh bread dough, apricot, peach, pear and spice with hints of fresh hazelnut for complexity.  The flavors are complex, too, with fresh lemon, stone fruit, key lime, and green apple fruit notes with accents of salty (not sweet) caramel, toast and spice.  The texture is very fine and sliky and the finish very, very long, with fresh lemon pulp and salty hazelnut notes lingering on and on.  Enjoy it right now for its citrusy freshness or let it rest for 3-4 years to pick up still more ginger, baked pear, and toasty, nutty, complexity.

A rock-solid standard in Champagne excellence is better than ever in this year’s beautiful release.  Brut Reserve blends roughly equal parts of Pinot Noir, Pinot Meunier and Chardonnay that are gently pressed and fermented and matured in tank.  This year’s release is based on vintage 2012 with at least 25% reserve wines from one or two prior vintages.  The secondary fermentation takes place in the winery’s colder-than-average cellars, slowing it down and driving the creation of especially tiny bubbles.  After 4 years on the lees, it’s riddled by hand, disgorged by hand, and given a generous dosage of 7-9 g/l.  At once refined and rich, elegant and firm, this is delicious now and will actually get better over the next 2-3 years.

"Straw yellow and with a golden hue in color, the Pol Roger NV Réserve Brut displays a brilliant, perfectly ripe but also fresh, highly elegant and refined fruit aroma on the nose; think of cooked pip fruits like pears and apples, but also quince-confiture and yellow stone fruits, such as apricots and peaches intermixed with vanilla, brioche (pain aux raisins), some nutty flavors and also some white floral notes. On the palate, this medium-bodied Brut is as round (if not pretty sweet) and fruit-driven as it is delicate, pure and very elegant. A new wine for us, but one that’s been getting a lot of “buzz” in the wine world recently.  As The New York Times reported last Christmas Eve, “Rodez is centered in Ambonnay, which is known as pinot noir country, but the producer makes an unusual, superb blanc de blancs ($65) from Ambonnay chardonnay. It is richer and fuller than the blanc de blancs you might find from, say, Vertus, but pure and beautifully balanced with great finesse and minerality.”

This new release is a step up from both the wine tasted by The Times and the 91 point example Vinous showcased three years ago.  The nose is reminiscent of maturing Grand Cru Chablis with leesy, brothy, aromas of ripe apple, tangy pear, salty stone, and a pretty accent of toasted hazelnut and caramel.  The salty, minerally, Chablis-like character continues on the palate with lemon, lime, and Granny Smith apple fruit and loads of saline crushed sea shell and chalk.  The ripe apple and apricot fruit comes up nicely on the finish where the very small bubbles lift the flavors and leave fresh stone fruit, citrus, buttered biscuit, and toasted hazelnut flavors with a just right dusting of lime zest.  Richer than all this sounds, the Blanc de Blancs will sing with lobster and scallops or refresh nicely on its own.

As the name suggests, Eric Rodez’s Grand Vintages is a rich, powerful and very much “grand” wine in the tradition of Krug (where Eric learned his craft).  This year's release is a blend of 70% Pinot Noir and 30% Chardonnay from seven great vintages going back to vintage 2000.  Eric ages all of these base wines in used oak and blocks malolactic fermentation to maximize freshness and vibrancy.  Then the carefully crafted blend spends 8 full years on the lees before being disgorged this October. The dosage is ultra-low - 2 or 3 g/l - so this could be labeled "Extra Brut," but there's so much richness and depth here that "Brut" seems more appropriate to Eric.

Past releases have earned plenty of critical praise, including 17.5/20 points from Jancis Robinson, 93 from Vinous, and 92 from Wine Advocate.  This year’s release is explosive on the nose and palate, pumping out big notes of lemon curd, caramel, toasted nuts, baking bread, crushed chalk, and more.  The flavors just balloon out to fill your entire palate and finish with layer upon layer of mouthwatering pie crust, lemon curd, hazelnut, crushed stone and salty caramel flavor.  Try holding some for even more richness!
