About 18 months ago, as we sat at table with Lyne Marchive and her daughter, Amandine, marveling over a bottle of 2009 Tour du Roy, Lynn raised an eyebrow and asked, "Would your customers have interest in Chablis with age?"  Which is how the winery's last six cases of the 2011 vintage Tour du Roy came to rest in our store - ideally as a way-station on their trip to your cellar!

THIS is why you should always stash away a few bottles of well-made Chablis for 4-8 years.  It serves up a HUGE maturing Chablis nose of crushed chalk, river stones, toasted almond, tangy pineapple and lemon curd – although that’s just an impression, because every swirl uncovers something new.  On the palate it’s fantastically fresh and mineral, with a slick of herby Meyer lemon and tangy green nectarine fruit supporting flavors of toasted nut, citrus zest, rainwater and more.  Boldly chalky/mineral on the finish, where the acidity and crushed stone make your mouth water and bring the flavors back up for a second pass around the mouth.  It’s certainly ready now, although there’s no rush – say drink up by 2021 if you like it now or 2026 if you want even more secondary development.
