Everything about this wine is “super-premium” – except the price!  Winemaker Richard Bonvin sources Malbec from some of Mendoza’s oldest high-altitude vineyards, including some 100 year-old vines.  The old vines deliver small crops (around 2 tons per acre, or less than half normal Malbec yields) of intensely concentrated, wonderfully ripe, fruit.  Bonvin has the fruit harvested entirely by hand in small trays to bring only the best grapes into the winery in perfect condition.  Fermentation starts naturally from native yeast and is kept going at a cool temperature to retain fruit and freshness and avoid over-extraction.  The young wine ages for 15 months in expensive French oak barrels from top cooper Nadalie before going into the heavy (and expensive!) bottles.
